Description

Rhyolites du Cahier is a single-plot cuvée from Domaine du Matin Calme, sourced from the "Le Cahier" lieu-dit on volcanic soils of rhyolite, quartz and phtanite. The Earth trigram appears on the label, symbolising simplicity and generosity. Hand-harvested, fermented with indigenous yeasts, this 100% Chenin is aged 12 months on fine lees in tank, unfiltered.

   Pale yellow with a green-gold tint, highly luminous

   Complex ripe white fruit, hints of cooked fruit (peach, apricot), followed by a touch of honey

   Smooth and generous, well balanced. Long, saline finish, distinctly marked by its volcanic terroir

   10-12°c

   Decanting optional

   3 - 5 years, ready to drink now, will evolve nicely over a few years
