Description

This Crémant de Loire from Domaine du Matin Calme carries the name "Sori" — meaning "sound" in Korean, a nod to the fine, lively fizz of its bubbles. Sourced from plots in Juigné-sur-Loire and Mozé-sur-Louet, it blends three distinct estate terroirs — sand, schist and rhyolite. Hand-harvested in crates, it combines Chenin, Chardonnay and Grolleau noir, then ages on lees (sur lattes) for 16 to 24 months to build complexity.

   Chenin, Chardonnay et Grolleau noir

Pale straw yellow, animated by fine, lively bubbles.

Generous: ripe white and yellow fruit, a touch of dried flowers.

Soft and smooth, with hazelnut and almond notes from extended lees ageing. Fresh, generous finish.

   8 à 9°c

   3 - 5 years

  • Aperitif: salmon puff pastries, fish roe
  • Scallop carpaccio, sea bream fillet
  • Asian cuisine: shrimp tempura, sushi
  • Vegetarian dishes: asparagus risotto, fennel and orange salad
