Description
At Domaine Boehler, nothing is left to chance. Leimen — rom the Alsatian dialect for "clay soil" — takes both its name and its soul directly from the ground beneath the vines. An AOC Alsace white of striking minerality: taut, precise, with that touch of roundness only clay can give.
The colour is golden, luminous. The nose opens on ripe white fruits — peach, pear — lifted by a fine, chalky minerality. On the palate, the balance is exceptional: bright freshness, generous texture, and a long, saline finish.
Grape variety : 100% Sylvaner
Serving temperature : 10 – 12°C
Recommended aging : : Enjoy now or cellar for 5 to 8 years to unlock its full complexity.
Pairing :
- Fish & shellfish
- Fresh cheese
- Flammekueche
- Desserts : White fruit tart (pear, peach, apricot - a perfect mirror pairing) Lemon cheesecake (the wine's minerality cuts beautifully through the acidity) Almond financiers (the clay-driven roundness is a natural match), Fresh fruit salad (light and refreshing)
